The temperate climate of the Margaret River region is very conducive to the cultivation of the Riesling variety, resulting in a wine with exceptional taste and aroma characteristics.
The entire process of making this wine was carried out exclusively using traditional winemaking techniques, with fermentation only with natural wine yeast (wild fermented). It has a distinctly straw colour, a bouquet with a hint of jasmine, rose petals with the addition of lime. It is characterized by a complex structure, aroma intensity, and is strongly mineral. The mouth is dominated by citrus, roots and mineral accents, and as secondary lips – peach and nectarine. It tends to be slightly sweet, but also has a well-balanced acidity. This wine is ready to be consumed, but it will be enriched by maturing until 2040. Excellent for dishes made of white meat, seafood, oysters and all kinds of fish, as well as for exquisite salads such as Nicoise.
