Terra Donum is braggot. But what is braggot? Historically, it is a combination of mead and beer. That’s it and that’s it. This style does not have a rigid framework like other styles. The beer base can be any here, which gives a wide field for interpretation. One can argue whether braggot is still beer or mead, the more that braggots can also be formed in other processes than brewing (eg mixing) and can have more than 50% honey. However, we brew beers, which is why Terra Donum is definitely beer. As in all braggots, honey plays the first violin here. In the charge (if I can say so) we used 33% natural, aromatic buckwheat honey. The beer base can be described as subtly roasted or smoked barley wine.

Darkness fell. The flames in the stone fireplace lit up the chamber with warm light, shimmering on the stone walls and casting long shadows on the oak floor. The brewer walked from corner to corner. He couldn’t sleep, something was bothering him… The celebration of the Thanksgiving Year was approaching and they had long since agreed with the ruler of the land of forests and lakes that the best drink to celebrate such an important celebration would be braggot – beer on honey. And although the beer, which had been aged in the cellars of the castle for a year, was brewed on extremely aromatic buckwheat honey and was approaching the peak of its perfection, the brewer could not fall asleep. He mentioned the vines of the “hops of oblivion” that once entwined the kingdom and when everyone was losing hope, about the return of one of the daredevils with the famous Sechlonska Suska. And about what happened when they ate it after draining the beer… He smiled for a moment. He also remembered the reptile of beer-leavening beer, which after drinking barley wine with mountain ash turned into waxwing… And then how the cat 😉 hunted her Braggot, however, lacked a magical ingredient that would enchant the most demanding palate. The next day at dawn he went for a walk outside the castle walls. Nothing refreshes the mind like the nature of the earth flowing with milk and honey. He wandered there until noon, when the heat of the August sun persuaded him to rest. Peasants working in the fields noticed him and invited him for a meal. So he gladly acquiesced. Curious, he told him what was bothering him so much. The peasants, however, did not know anything about brewing beer, so there was little they could help. They kindly offered bread with honey and gave to drink roasted with chicory cereal coffee. When the brewer took a bite and drank coffee… That was the taste! He sprang up from his seat, thanked him warmly and set off on his way back. Still, he was restless. He sensed that in a beer so strong, filled with sweetness and aroma of honey, with oily fullness, the addition of cereal coffee may not be enough. Reaching the castle, his eyes were attracted by women collecting elderberries for tinctures. Oh the irony! Just as mountain ash fruits are suitable for eating after freezing, elderberry fruits lose poison when boiled. It was a sign. He was already sure that the tart elderberry juice would soften the oily sweetness of the beer… and he wasn’t wrong… This is how a unique braggot with elderberry and cereal coffee was created, with which the first toast of the Year of Thanksgiving was raised. For success, for abundance, in thanking mother nature for the generous gifts she bestows on the land. And its name is TERRA DONUM.

In the charge (if I can say so) we used 33% natural, aromatic buckwheat honey. The beer base can be described as subtly roasted or smoked barley wine. It is sweet in a way characteristic of buckwheat honey. However, to alleviate its heaviness, we have been working on additives that will counter and diversify the sweetness of this beer. For the first time we decided to use 2 additives: cereal coffee and elderberry. In the smell, buckwheat honey is broken by the roasting of cereal coffee. In the third plan, there are fruit accents of elderberry. And what does it taste like? Cereal coffee added on the aging brings accents of cereal palability, and the roasted chicory contained in it diversifies its pleasant bitterness. Elderberry fruits, in turn, counteract sweetness with their sourness or even tartness. Both additions caused the beer to definitely gain in drinkability. At the finish, it is the sourness and flammability of the additives that cuts off the honey sweetness, encouraging the next sip. Like magic… after all, historically, braggot was a magical drink in the cultures of Scandinavia, the British Isles or the Balts. The beer is brown-burgundy in color, almost opaque, against the light you can see ruby flashes. Due to the strength and consistency of the beer, the creamy foam is negligible and quickly reduces to the accompanying ring until the end of the tasting. The whole composition is extremely dessert, tasting, warming from the inside… Like the best, exquisite tincture. The liquid spills velvety in the mouth, delighting with its fullness and complexity of taste and aroma… magically…
