St-Remy Abbey, also known as Abbaye Notre-Dame de Saint-Remy, was founded in 1230 in the south of Belgium. The monks started brewing beer around 1595. Through several wars, including the French Revolution and World War II, brewing has been stopped and resumed several times over the centuries. Most recently, brewing started again after World War II with the help of the monks of Chimay, bringing Rochefort Trappist beer back to the world. The abbey's beautiful little brewery, Rochefort Trappist Brewery, produces full-bodied, deep-flavored ales because the water source, Tridaine Spring, is rich in calcium. They are conditioned in bottles and are among the best beers in the world.
