Until World War II, dark beer dominated the Munich area. A special role in the production of this specialty was played by hard water found in the region. In his book “Beer International”, the world-famous English beer writer, Michael Jackson, accurately describes Ayinger “Altbairisch Dunkel” as: “A good example of its kind. Impenetrable darkness with a golden-brown sheen against the light and a warm aroma and malty aftertaste, evoking the coffee taste sensations after descending. It is brewed from five types of malt (two of which are frighteningly dark) and is only slightly hopped off.” It is produced in a traditional double fermentation process.
