The first beer in our new BIOTRANSFORMERS series is WINE IPA. We chose hops for this Ipa, which most reflect the notes of Sauvingon Blanc grapes, i.e. Enigma, Hallertau Blanc and Nelson Sauvin. The Sauvingon Blanc grape variety is known for being rich in thiols, which bring fruity nuances such as gooseberries, citrus or passion fruit. One of the tricks in this beer was to use the method of releasing as many thiols as possible, which are biotransformed by yeast into aromatic substances. The second is the use of a food enzyme preparation. It consists of β-glucosidase enzymes, which are capable of hydrolyzing glycosidic bonds, releasing monoterpene alcohol compounds and glucose. It has been developed to support the biotransformation of hop oils, which significantly affects the complexity of the aroma and taste of hops in beer. We promise that you will be satisfied.
