The third beer from the experimental series of BIOTRANSFORMERS beers is DIP N DRIP, in which we used a relatively new hopping technique.
Hop dipping was first implemented by the Spring Valley brewery in Japan. It is actually a form of hopping at a temperature of about 65C-70C, which takes place in the fermenter and starts before the actual fermentation of beer.

Unlike cold hopping, which usually takes place at the end of fermentation, hops are present from the moment the yeast comes into contact with the wort. This method preserves flavors and aromas that would not survive higher wort temperatures and significantly supports the biotransformation of hop oils.
At the end of fermentation, we also added an enzyme to aid biotransformation, which significantly affects the complexity of the aroma and taste of hops in beer. We have already used the same enzyme in the two previous beers #1 Wine and #2 Weed.
