Lovers of savages can rub their hands – here comes the next installment of our series inspired by Belgium and the world of Lambików and Flanders.
This time it was the turn of the “cleaner” – our interpretation of Flanders Red Ale. We started its preparation nearly three years ago! After the first fermentation, it was aged in an ash barrel, where it was eaten by Wyeast 3278 blend. When we decided that the liquor was ready for further adventures, we poured it into champagne bottles and added the raw material for refermentation. And here it is!
Dry, sour, winey, fruity, wild, complex.
We are glad that our first adventure with this style went so well. We hope you will like it too!
