As with Kriek, Rosé de Gambrinus will present a maximum of “fruitiness” if it tastes young. Age will indeed allow Lambic to fully express himself, to the detriment of the fruit.
Raspberries come from Serbia.
Fruits consist of Lambic at the age of 20 months at an average rate of 200 g of fruit per liter. Since raspberry is a fragile fruit, we will have to opt for a soft and tender Lambic to harmonize with the fruit.
After maceration lasting two to three months, Lambic will bring out the colors, aromas and flavors from the raspberries.
Then it will be mixed with the annual Lambic, which will introduce into the bottle the sugars necessary for the second fermentation.
We work exclusively with fresh fruit and, as in the case of wine, we can talk about Cantillon beers with a vintage effect.
The weather has a big impact on the ripeness and quality of the fruit, so fruit beer will vary slightly from year to year.

PRODUCENT - Cantillon
The Brussels Gueuze Museum was founded in 1978. This association was founded on the initiative of Jean-Pierre Van Roy, supported by several friends. The goal pursued by the master brewer was simply to avoid the disappearance of Brasserie Cantillon. It is worth knowing that spontaneous fermentation and its derivatives, so sought after and appreciated today, were then old-fashioned beers. So it was about protecting and promoting the brewing tradition that flourished at the beginning of the 20th century. Cultural measures were used to achieve this goal: guided tours, exhibitions, public breweries, the use of historic buildings and equipment that are still in use. The Cantillon Brewery has become a living museum and it is thanks to the Brussels Gueuze Museum that it has gained a reputation beyond borders.
