Before we tell you what our interpretation of this style is, we will briefly tell you what this “graph” is…
Well, graff is a fusion of beer and cider – just like braggot, which is a fusion of beer and mead. To create graff, apple juice is combined with wort at the brewing stage, and then malt-apple whole is fermented and aged. Graff is therefore not a beer with apple juice (added after the end of fermentation), but a real hybrid combining both beer elements and cider character. Because both sugars from malt and those contained in apple juice are involved in the fermentation process.
The style itself does not have such a long history as the rest of the beers of the series. It is not a brewing treasure of the country, a relic of old customs, or a beer symbol. Graff is the result of the unlimited imagination of brewers who decided to “revive” and “materialize” the drink drunk by the heroes of Stephen King’s saga “The Dark Tower”.
Our interpretation of graff has reached imperial values. Its extract is 26 plato (blg), which allowed to obtain 11.5% alcohol. We tried to brew beer, in which the beer and cider parts created the perfect composition. Malt beer, full, but due to the fruity sourness of apples light and very drinkable.
The element that distinguishes Astus Malum from other imperial beers in our offer is its lightness and treachery. The fruitiness derived from apple juice and building this beer on light malts makes it a much lighter beer in reception than the porters, barggot or barley wine present in it earlier. However, this apparent lightness does not make it a trivial beer – our graff is a powerful beer, with a rich taste and considerable power.
Astus Malum is a beer that has beer characteristics – a malty, delicate base and a beer finish. However, in addition to the beer features, graff has clear accents located on the cider features – apple dryness, saturation which is irresistibly associated with effervescence, but also treachery. While other imperiale beers were heavy and extremely tasting, the graph is very drunk And as fast as disappearing from the glass, as quickly hitting the head. But as in the case of champagne, so in the case of graff “nobles oblige” – so we encourage you to enjoy every sip of this unique beer. I assure you that each of them will reveal further spaces of the aroma and taste contained in Astus Malum.
Our graff, apart from beer and cider features, also has delicate, but equally charming – like the threads of Indian summer – accents from roasted French oak. Aging of the whole brew in barrels – at the moment – was not possible in our brewery. Therefore, Astus Malum matured in the presence of oak cubes, which gave it an oak, barrel dimension. Oak gave graff a delicate sweetness and vanilla softness.
With the parameters of Astus Malum , long aging was also indispensable. First of all, it allowed the composition to be nobled, and its most interesting nuances to be properly accentuated…
What is the end result? In our opinion, fulminant! But to find out about it you have to buy Astus Malum and enjoy its taste from the moment you open a cool bottle, when the effervescence shows how fruity the beer is, to the moment of heating and gassing the graff in the glass, when it shows how much it goes towards perfect, noble calvados.
