Jopejskie Beer is a brewing legend whose original recipe was lost many years ago, after World War I. However, many people still try to recreate its taste based on fragmentary descriptions. It is characterized by a thick, caramel consistency, which makes it a thick and non-carbonated drink. Its unique bittersweet taste is associated with notes of dried figs, dates and raisins. Unlike typical beers, Jopean beer undergoes spontaneous fermentation, which means that wild yeast and other microorganisms from the atmospheric air are responsible for the fermentation process, which gives it a unique character.
