PALATUM AQUA IMPERIALE – Wood Aged Sour Rye Ale

This week we are running for a bottling of beer that we have been planning for a long time, brewing which we got tired like hell, and which for over 8 weeks we have been trying every day to check how it changes – after all, the brewer’s job must also have some advantages.

Aqua Imperiale is Wooden Aged Sour Rye Ale – this is the style we came up with, and now with undisguised satisfaction we can confirm that it was a very good direction. Rather heavy and rich, with distinct malt-rye notes (plum, raisins, delicate caramel, rye spiceness), at first feeling sweet, but with a relatively dry finish, moderately sour. What captivates the most in this beer are the notes introduced by wood – vanilla, spiceness, light wine cheapness, and despite the 9% content, alcohol is practically imperceptible, and beer is drunk basically by itself.

Plato 20.5, rye fill, acidified with lactic bacteria, fermented with Kveik yeast, matured in the presence of chips (tosted oak) and cubes from a bourbon barrel.
