SPECIALTY WOOD AGED BEER

Dark ruby color, uniform, no foam and transparent. In the nose, the whisky’s characteristic peat notes and malty notes are well balanced on a warm and durable body that opens in caramel tones at the finish.

In the mouth, notes of caramel and smoke from the barrels in which the beer is refined mix well and remain at the finish after a short hint of aroma of ripe fruit.

In 2012, the aging process of Xyauyù was enriched with the appearance of barrels of Scottish origin, which contained great Scotch whiskies. Their main feature is peat notes.

The name of the beer is not unpublished, in fact Xyauyù Fumè was originally produced using Chinese Lapsang Souchong tea characterized by smoky notes. It seems that Theo prefers his choice of whiskey, but to find out which one, you will have to come to Piozza and ask him directly.

The Baladin brewery farm was founded in 1996 as a brewpub (production and bar) in Piozzo - a small village in the Langhe region of the province of Cuneo - by its founder and master brewer Teo Musso. In the course of its evolution, it has moved several times, following changes in its production needs: from a few square meters stolen from a pub, through a larger space in Teo's parents' henhouse, to the current modern and wide facility at Baladin Open Garden. All the places where the brewery has been hosted have one thing in common: the production area is an open space that welcomes people and tells a story. All Baladin HQs have always been conceived to spread knowledge about craft beer and the philosophy that guides the creation of each product developed by Teo Musso.
