Brocreation SAVAGE 001 – Cherry Wild Ale

The first chronologically, and the second when it comes to the moment of release, the scene of our most ambitious, most time-consuming and expensive beer answered “I’m ready” to our “check”. So we can confidently introduce you to the Krieka-inspired Savage 001 – Cherry Wild Ale.

The adventure with savages on a commercial scale was a total novelty for us as producers. Yes, we played with wild and sour beers at home, but it’s a different scale, different risks and different responsibility. First of all, before you, who will buy this beer and you will judge. Nevertheless, after more than 2.5 years from brewing, we think that the beer will meet the requirements of every lover of fruit savages.

So, let’s recall how this happened:

👉 We started the whole project in mid-2018, when we brewed the base in the Marysia brewery.

👉 After pre-fermentation in the tank, in September 2018. We poured the beer into four fresh Kirschwasser kegs, each with a capacity of 650 liters.

👉 The base, which later became Cherry Wild Ale, was inoculated with the WLP653 Brettanomyces Lambicus strain.

👉 In September 2020, we combined the base with the fruit. The Savage 001 was home to cherries. A moment later, we premiered this beer in a version poured from the tap at the Pub’s birthday party.

👉 The bottle version matured longer. Even longer than the Savage 002 Raspberry Wild Ale, which we bottled shortly after. In both cases, we carried out refermentation in a slightly different way, hence the difference.

👉 Fortunately, at the beginning of March, the Savage 001 Cherry Wild Ale stuck out our chest and confirmed its readiness to get into your hands.

👉 We poured the beer into champagne bottles with a wide cap, covered it with numbered labels and closed it in a cardboard box.
