In the world of German brewing, Kräusen refers to the intense proliferation of bubbles and foam formed during the fermentation of young or “green” beer. And “Aufkräusen” (literally “kräusen it up”) refers to a historical brewing technique in which a little green beer is added to a fully matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, raw flavors of fully ripe lager.
Aecht Schlenkerla Kräusen starts like a normal Helles Schlenkerla Lager and matures for months in the old rock cellars under the brewery. Just before filling, it is mixed with the already mentioned “Kräusen” technique with the classic Märzen Rauchbier. The result is an unfiltered, bottom fermentation and amber hybrid Märzen Lager with a lively and slightly smoky taste

PRODUCENT - Schlenkerla
In the middle of the old part of Bamberg, directly below the mighty cathedral, is the historic Schlenkerla smoked beer brewery. First mentioned as the "House of the Blue Lion" in 1405, the Schlenkerla is today managed by the Trum family in the sixth generation and is the Original Schlenkerla Smokebeer fountain (in German it is called "Aecht Schlenkerla Rauchbier"). Smoked beer is here in the tavern of the brewery, which, according to the old tradition, is still poured directly from a wooden barrel. "Even if the infusion tastes a bit odd on the first sip, keep going because you'll soon realize your thirst won't diminish and your pleasure will noticeably increase."
