Midnight Maple is a unique blend of two Imperial Stouts that are carefully matured in the brewery’s Barrel Room. The first one is Pastry Imperial Stout, which is aged for over 2 years in Buffalo Trace barrels. The second is the double-mashed Imperial Stout, which spends nearly a year in Jim Beam and Wild Turkey casks.
Both of these liquors are distinguished by their intensity, strength and density. The first one was created thanks to the use of a huge amount of malts and a long cooking process, which resulted in a high extract. The second one has been subjected to the “double mash” technique, which further emphasizes its unique character.
After two years of aging in barrels, the beers are saturated with notes of vanilla, oak and noble alcohol. These elements create a harmonious blend with the softer notes of coconut and bourbon that come from the shorter-aged stout. The version with the addition of peanut butter, vanilla and chocolate aromas is a real feast for the senses.
