Berliner Weisse is a cloudy, acidic, wheat style beer with a low alcohol content. It is a regional, historical beer of northern Germany, especially Berlin, where it has been brewed since the sixteenth century. Until the end of the nineteenth century, it was the most popular alcoholic beverage in Berlin – it was produced by as many as 50 different breweries! Currently, this number has dropped to just 2, but thanks to craft brewing, this style is experiencing its revival.
This beer is characterized by very low extraction, at the level of 9%. The mash was composed only of light Pils and wheat malt, which allows you to achieve the maximum lightness that characterizes this style.
