With the Baltic Porter, and even more so with his imperial version, it is not easy. The stakes are quite high and boil down to a simple statement – either thick or not at all. This beer simply MUST be very good, otherwise it simply does not make sense for it to exist.
Super strong starter extract of 26 degrees on the Plato scale, a lot of chocolate and roasted malts, a lot of warming, but arranged alcohol, definite bitterness, coffee, chocolate, nuts, prunes and brave bitterness getting along with all this wealth, but not one that will trample everything at the end, but one that nicely puts everything together. Every brewer and consumer knows the theory, right?
